Sous Chef

Job Description

Covenant Shores, near Seattle, has an opening for a full-time sous chef. This key position functions as an essential part of the dining services team and reports directly to the Executive Chef.


In this role you will:



  • Oversee kitchen operations and staff under the direction of the Executive Chef.


  • Oversee food preparation and presentation to ensure that residents and guests receive high quality food in a timely manner.


  • Prepare food following standard recipes and/or special diet orders.


  • Assist in product organization throughout the kitchen; Place food orders electronically with vendors; Put away large food deliveries.


  • Ensure that sanitation standards of all food production and storage areas are met.


  • Use standard institutional food preparation equipment, including grill/flat top, steam table, stand mixer, slicer, immersion blender, food processor, conventional and convection oven, steamer, ice machine, chafing dishes, sharp knives and coffee maker.



For this role you need:



  • High School diploma or equivalent. Culinary certification or degree highly preferred.


  • Computer skills to place electronic orders, use Food Management programs and printing software.


  • Two years' experience as a cook in an institutional setting; Experience with institutional equipment and procedures preferred; One year advanced training in food production preferred; Experience with therapeutic menu preferred.


  • Previous kitchen supervisor experience preferred.


  • Knowledge of HACCP procedures and all physical/food safety standards, organized records/log keeping, knife skills, demonstrated ability to fabricate meals, scratch cooking techniques, ability to produce high volume batch cooking, portion control, measurements; and ability to read and follow recipes required.


  • Demonstrated ability to train and coach others on the kitchen team.


  • High degree of personal cleanliness and hygiene.


  • Good English writing and speaking skills.


  • Ability to thrive in the fast pace of a busy kitchen.


  • Demonstrated ability to remain calm and tactful under stress.


  • Work on some weekends and holidays required.



Other requirements:



  • Valid Washington State Food Handler's permit.


  • Must pass pre-hire drug screen and background check.

Don't Be Fooled

The fraudster will send a check to the victim who has accepted a job. The check can be for multiple reasons such as signing bonus, supplies, etc. The victim will be instructed to deposit the check and use the money for any of these reasons and then instructed to send the remaining funds to the fraudster. The check will bounce and the victim is left responsible.
